Students of Hospitality Management in the Mid La Union Campus brought home a Bronze Medal from the Philippine Culinary Cup Young Chef’s Competition 2024, held at SMX Convention Center, Pasay City, on July 31-Aug 3, 2024. The activity was organized by the Embassy of Canada in partnership with the Commission on Higher Education (CHED) Indigenous Knowledge System and Cultural Management (IKSCM) Program.
The team comprised BSHM student-competitors Juliet Q. Quidolit, and Ian Caesar A. Corpuz, and BSHM student assistant John Jerald Juralbal.
The winning team impressed the judges with their innovative dishes, which were infused with local ingredients. They prepared a salmon in honey vinegar dressing canape for an appetizer and skirt steak a la Elyu for the main dish. They used honey and honey vinegar produced by DMMMSU and mulberry and taro, which are also from DMMMSU. For their steak, they used DMMMSU honey and Bauang bugnay wine.
Preparation for the contest was rigorous, with the team dedicating countless hours to perfecting their recipes and techniques under the guidance of their culinary arts coaches, Prof. Geremy S. Cacanindin, Prof. John Denver C. Rindon, and Prof. Zhelyn A. Hufana. They were also mentored by culinary management students of De La Salle-College of Saint Benilde.
“We are deeply honored to have been chosen to represent the University. This opportunity is something we will always be grateful for,” the students expressed, basking in the glory of their hard-earned victory.
